If you want to grab a genuine bite of Chinese culture, experimenting with some of the country’s best recipes isn’t a bad way to go about it. The food regions of China are numerous and varied—each has its own distinctive ingredients, tastes and textures—while the country’s culinary history harks back to a far distant past, cloaked in the mists of time and steaming dim sum baskets.
The cookbook we’ve compiled, therefore, is in no way conclusive. It does, however, provide an eye-opening and lip-smacking insight into the tastes to be found across this astounding country; these are dishes you can find in China’s humble homes, teahouses and even on its street corners.
